Just an hour north of Sydney, where rum once fuelled rebellion and commerce alike, Terrigal Rum Co. is quietly redefining the spirit that built a colony.
Born on the Central Coast, where the very first sugarcane in New South Wales was planted at Point Clare, just 15 minutes from our distillery, we’re creating a new legacy for Australian rum. One grounded in provenance, purpose and place.
We honour that legacy by using molasses from cane grown in the Clarence River Valley in northern NSW, known for its high quality, full flavoured sugarcane. This rich molasses is fermented and brought to life with pure water sourced from the Central Coast hinterland, delivering a true sense of place in every batch.
From there, every step is considered. Even our spent ferment returns to the land, enriching the paddocks of Peats Ridge as natural fertiliser, a sustainable cycle that supports local agriculture and minimises waste.

The Inspiration
FROM THE MAKER
Some years ago I set out to make a dark aged rum that I personally could enjoy. It needed to have an arresting nose and a supremely smooth palate with a perfectly balanced complex of enjoyably stimulating flavours.
After my early trials – I ended up doing 158 fermentation/distillation trials. I soon discovered there were a few obstacles in the way to making a sublime rum.
Firstly I needed more fruit characters on the nose and palate as the standard yeasts I started with were good alcohol producers but somewhat limited in the fruit department.
With some trepidation I embarked on many trials using wine yeasts which really bore fruit so to speak. I now have a stable of eight wine yeasts which give me the following flavours: tropical fruit, stone fruit, citrus fruit, dried fruit and floral notes. All of them have been selected for the secondary but very important ability to create great, rich texture, mouthfeel and viscosity.
Secondly I needed to eliminate three undesirable flavours which occur in many dark high alcohol by volume spirits.
The three nuisances are…
Heat in the middle of the palate
Green, grassy, bitter sensations
Astringent, drying, tannic texture.
The heat was removed by using yeasts and yeast nutrition to create a slow, low temperature fermentation. This also resulted in many more good flavours than bad flavours being produced.
The green grassy characters were prevented from forming by a wild yeast which is able to prevent non beneficial microflora from multiplying in the fermentation.
The astringency was down to the oak barrels. We found by constantly monitoring the rum in the barrels we could move the spirit on before any undesirable flavours became entrenched.
Bad flavours are much stronger than good flavours, which mean the bad flavours can easily neutralise the good flavours. By wiping out the bad flavours we allow the good flavours to shine and create a rum which I personally really enjoy.
